wine description
Earth, wind and sun allowed the grapes for this wine to ripen to perfection. We pressed them carefully and allowed the natural fermentation to take its course, adding fresh, hand-picked grapes in 500 litre acacia and oak barrels. The yeast was regularly suspended by hand over a period of 2 years in order to maintain the stability of the wine even without the addition of sulphur. We only added a very small amount of sulphur for protection when bottling.
