Depending on the climatic conditions, the grapes ripen by the end of August or the beginning of September - our aim is to achieve the best possible balance between acidity and sugar content.

Now it is important to protect the grapes from hungry birds for as long as possible, e.g. by using nets or deterrent noises, to prevent them from "harvesting" prematurely. Once the grapes have survived all this and their degree of ripeness - recognisable by the browned grape seeds - is optimal, the harvest can begin. A fully automated harvesting machine is used to start in the cool hours of the night, because: The often still very intense September sun would heat the grapes too much during the day - unfavourable conditions for further processing in the wine cellar.
