budding and flowering

Young vineyard Winery S. Pratsch

This natural spectacle is the harbinger of spring here in the Weinviertel: almost every day you can watch the vines grow and observe how the so-called "eyes" of the vines turn into small buds. These buds grow into tiny shoots, which later become juicy and strong. Our barren, brown hilly landscape, scarred by winter, awakens to a blooming, increasingly green ... Read more

tethering

The arches remaining after pruning are now fixed along the first vineyard wire using a fine wire: One arch is stretched to the right of the vine, one to the left. This allows the young shoots growing from the arches to stretch upwards towards the sky. If necessary, the old vine is also tied to the supporting wooden vine, ... Read more

cutting

In the middle of the cold season - usually in January, when the vines go dormant for the winter - we prune the vines. Thanks to modern technology, this work step is made considerably easier: the vines are shortened to different lengths using electric shears. The number of so-called "eyes", i.e. the places where the shoots will later grow, is taken into account. Read more

thinning out grapes

Grapes at a very early stage

Yield reduction or defoliation if necessary Depending on the previous weather conditions and the prosperity of the vineyard, the number of grapes must be reduced in the event of excessive grape growth in the interests of quality: This is done by hand using standard vineyard shears. While the cut grapes fell to the ground unused in previous decades, we now use the juice from these unripe grapes for the ... Read more

knitting in

As soon as the shoots growing out of the arches are high enough, they are "knitted" into the first double wire by hand. The wire construction helps the shoots to grow vertically upwards and thus form a dense wall of foliage. In this way, the shoots protect each other with their leaves from the increasingly strong sun.

cellar work / writing a cellar book / label design

The preparation of the wines in the cellar continues in winter: Yeasts are stirred, the first classic wines are made ready for bottling and the cellar book - our documentation platform - is continuously updated. Depending on the requirements of the (mostly export) market, we make individual changes to the desired labelling / design details.
