Now it is important to protect the grapes from hungry birds for as long as possible, e.g. by using nets or deterrent noises, to prevent them from "harvesting" prematurely. Once the grapes have survived all this and their degree of ripeness - recognisable by the browned grape seeds - is optimal, the harvest can begin.
